Fresh Fall Salads

Looking for something fresh, crunchy, and delicious? Here's an easy salad recipe you can whip up with the lettuce you have growing in your garden in no time! Top it off with some homemade lemon vinaigrette and bon appetite! 

What you'll need: 

Lettuce, of course! Lettuce should be one of the first veggies ready to pick out of your fall garden. In just over two weeks mine grew about four times bigger than the size I got it! It was amazing to see!

Pick from the red, green, and spotted romaine varieties that shipped with the fall Leaf'd Box Plant Kit. When you pick your lettuce always be sure to pick from the outside in. We sent varieties that can be continually harvested. This really maximizes the amount of lettuce you can get from your garden.

In order to make sure these varieties produce as much as they can, it is very important to be sure to pick your lettuce leaves from the outside in. The middle of the plant is called the growing point and is where the new baby leaves grow out of. You can tell because it's where the smallest leaves are. Go out and take a peak at yours so you can see how the plant grows. 

If you leave at least 2/3's of your lettuce plant in tact and don't pick the growing point (the middle of the plant), your plants should continue to produce for you for quite some time. It'll make it into natures soft serve ice cream machine-- delicious flowing lettuce growing from the inside out. It's amazing! This is the green loose-leaf lettuce that we sent with the fall boxes:

Once you've picked your lettuce, grab some of your favorite add-in's. A few of ours are nuts, mandarins, bell peppers, avocado, tomatoes and cucumbers. If you have your summer plants still growing, you can also pull from there! Here are some of the tomatoes from our summer plant kit:

 

Once you've gathered the crunchiest and freshest lettuce you can find, rinse it off and get creative with some of your favorite add in's. Get them all setup in a bowl, ready for your homemade dressing. 

To make some tasty Lemon Vinaigrette Dressing, you'll need:

  •  3 Tablespoons extra virgin olive oil 
  •  1 Tablespoon white vinegar
  •  1 Tablespoon lemon juice
  • ¼-½ teaspoon sugar
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper or more to taste

Wisk these ingredients together, toss into your salad, and voilà! The perfect salad to snack on and enjoy with your friends and family. Just be sure they don't steal it all before you get a bite.
