Herb Garden

We love our herb selection for the Early Spring Box! These varieties are diverse for all different types of recipes. From salsas, to dressings, to salads and biscuits, these plants will provide you with great additions to your kitchen. These plant types thrive in the sun, and can last for a whole growing season with proper maintenance.

Remember: To prevent shock, do not pick more than ⅓ of the plant when harvesting.

The Plants

Sage

Plant to Harvest: 30-60 days
Space Needed: 12-16 inches

Helpful tip:

The cilantro grows upwards and can get tall if left unharvested. Harvest often, and do not harvest more than a third of the plant at a time to prevent shock. 

Lemon Balm

Plant to Harvest: 30-40 days
Space Needed: 10-12 inches

Helpful tip:

Red sorrel is from the buckwheat family, and is great to help ease inflammation. This is a low maintenance plant that likes full to partial shade. Red sorrel is a hardy perennial that you can harvest in little increments at a time. 

Rosemary

Plant to Harvest: 50 days
Space Needed: 12-16 inches

Helpful tip:

Dill is an easy herb to grow. It will grow and bolt upwards if you leave it unattended and unharvested. Harvest often, and do not harvest more than a third of the plant at a time to prevent shock. Dill can grow fast, if it is overwhelming your garden, harvest and dry the herb. 

Caraway

Plant to Harvest: 60 days
Space Needed:: 12-16 inches

Helpful tip:

Fennel is a great herb because it doesn’t have common disease issues. This plantling can have the springs cut for garnish and recipes once it has time to mature. As long as less than a third of the plant is harvested, it can be harvested as it grows. The bulbous stalk of the plant can be harvested when it is 3 inches or more in diameter.

Parsley

Plant to Harvest: 60 days
Space Needed: 12-16 inches

This is tripled curled parsley. You can harvest your parsley as it grows, as long as you harvest from the outside in and do not harvest more than a third at a time. Parsley is great for garnishing and adding bountiful flavor to your recipes. 

Mint

Plant to Harvest: 60 days
Space Needed: 12-16 inches
