Herb Garden

We love our herb selection for the Early Spring Box! These varieties are diverse for all different types of recipes. From drinks, garnishes, pastas, or teas, these plants will provide you with great additions to your kitchen. These plant types thrive in the sun, and can last for a whole growing season with proper maintenance. Remember: To prevent shock, do not pick more than ⅓ of the plant when harvesting.

The Plants

Thyme

Plant to Harvest: 40-50 days
Space Needed: 12-24 inches

Helpful tip:

Originally from the Mediterranean area, this herb is drought-friendly so it doesn’t have high watering needs. Thyme is pollinator friendly and can grow in the ground or in a pot.

Parsley

Plant to Harvest: 40-50 days
Space Needed: 6-8 inches

Helpful tip:

You can harvest your parsley as it grows, as long as you harvest from the outside to the inside. Parsley is great for garnishing and adding great flavor to your recipes.

Oregano

Plant to Harvest: 30-40 days
Space Needed: 10-12 inches

Helpful tip:

Oregano thrives in full sun and loves warm weather. If you are growing in a pot indoors, plant near a sunny window. Remember to plant in pots with drainage holes at the bottom.

Mint

Plant to Harvest: 40-50 days
Space Needed:: 18-24 inches

Helpful tip:

Make sure to maintain your plant so that it does not overgrow. Planting mint in pots is a great way to control growth. Harvest mint as needed. The longer the mint is growing the larger and more flavorful the leaves will become. To harvest, pull from the outside to the inside.

Lemon Balm

Plant to Harvest: 30-40 days
Space Needed 12 inches

Helpful tip:

Lemon balm leaves, stems, and small yellow flowers can all be used to make teas. You can use shears to harvest, and can enjoy teas from the fresh or dried herb.

Sage

Plant to Harvest: 50-60 days
Space Needed: 18-24 inches

Helpful tip:

Sage is great grown in pots or in a garden bed. Harvest sage as needed by cutting off stems or pinching off leaves.

Bunching Onion*

Plant to Harvest: 30-40 days
Space Needed: 1-2 inches

Helpful tip:

Bunching onions will be ready to harvest when plants reach 6-8" tall, while the stalks are still white at the bottom and fairly thin. You can cook the stalks and the bulbs in recipes.

Arugula*

Plant to Harvest: 35-40 days
Space Needed: 6-8 inches

Helpful tip:

Arugula grows quickly and adds a slight peppery taste to any sandwich or salad. It can be harvested as it grows. Do not harvest more than ⅓ of the plant to prevent shock (unless you want to harvest the entire plant). This plant needs plenty of sun and water.
