Sun Dried Tomatoes

 

PREP TIME: 20 MINUTES    COOK TIME: 4-8 HOURS

 

Tomatoes have hundreds of uses, and as you're seeing, they can produce a ton of fruit on each plant! A great way to enjoy them for longer is by finding recipes that preserve them. Sun dried tomatoes are delicious, and can have many uses.

Here's one of our favorite ways to make them:

Ingredients: 

  • 4 pounds tomatoes
  • Salt to taste

Directions:

  1. Preheat oven to 200 F
  2. Wash and halve the tomatoes. Smaller tomatoes are better since they will dry faster
  3. Gently squeeze out the seeds
  4. Place them on a non-stick cookie sheet
  5. Sprinkle salt to taste
  6. Bake until they appear dried and have a leathery texture. This could take all day, so be sure to start this in the morning. You can remove smaller pieces as they become dried and leave the larger pieces to dry longer
  7. Preserve by placing in a jar, pushing them down, and filling with olive oil to cover them
