Sun-Dried Tomatoes

Tomatoes have hundreds of uses, and as you're seeing at this point in the season, they can produce a ton of fruit on each plant!

A great way to enjoy them for longer is by finding recipes that preserve them. Sun-dried tomatoes are delicious and can have many uses in all kinds of recipes, from salads, to pastas, to sandwiches or dips, and anything you can imagine! Here's one of our favorite ways to make them.

INGREDIENTS

To preserve your tomatoes, you will need the following:

  • 4 pounds of tomatoes
  • Salt (to taste)

INSTRUCTIONS

Step 1: Prepare the Tomatoes

Preheat oven to 200 F. Wash and halve the tomatoes. Smaller tomatoes tend to work better since they will dry faster.

Step 2: De-Seed and Season

Gently squeeze out the seeds and place the tomatoes on a non-stick cookie sheet. Sprinkle with salt to taste.

Step 3: Bake

Bake until they appear dried and have a leathery texture. This could take all day, so be sure to start this in the morning. You can remove smaller pieces as they become dried and leave the larger pieces to dry longer.

Step 4: Preserve

Preserve the dried tomatoes by placing them in a jar, pushing them down, and filling with olive oil to cover them. Enjoy in any way you'd like!
