Fresh Fall Salad
Leaf'd Box | October 16, 2020
Looking for something fresh, crunchy, and delicious? Here's an easy salad recipe you can whip up with the lettuce you have growing in your garden in no time! Top it off with some homemade lemon vinaigrette and bon appetite!
TIPS FOR PICKING LETTUCE:
Lettuce should be one of the first veggies ready to pick out of your fall garden. In just over two weeks, mine grew about four times bigger than the size I got it! It was amazing to see!
Pick from the red, green, and spotted romaine varieties that shipped with the fall Leaf'd Box Plant Kit. We sent varieties that can be continually harvested, which really maximizes the amount of lettuce you can get from your garden.
In order to make sure these varieties produce as much as they can, it is very important to be sure to pick your lettuce leaves from the outside in. The middle of the plant is called the growing point and is where the new baby leaves grow out of. You can tell because it's where the smallest leaves are. Go out and take a peak at yours so you can see how the plant grows.
If you leave at least 2/3 of your lettuce plant in tact and don't pick the growing point (the middle of the plant), your plants should continue to produce for you for quite some time. Your garden will become nature's soft serve ice cream machine -- delicious flowing lettuce growing from the inside out. It's amazing!
INGREDIENTS
Once you've picked your lettuce, grab some of your favorite add-in's. A few of ours are nuts, mandarins, bell peppers, avocado, tomatoes, and cucumbers. If you have your summer plants still growing, you can also pull from there!
Next, gather the following ingredients to make your own salad dressing:
- 3 tbsp extra virgin olive oil
- 1 tbsp white vinegar
- 1 tbsp lemon juice
- 1/4 - 1/2 tsp sugar
- 1/2 tsp salt
- 1/4 tsp freshly ground black pepper (or to taste)
INSTRUCTIONS
Step 1: Clean the Lettuce
Rinse off your lettuce and gently pat it dry with a towel.
Step 2: Whisk the Dressing
Mix all of the dressing ingredients together in a small bowl and whisk until combined.
Step 3: Add Salad Mix-ins
Add your salad toppings into a bowl with the lettuce and toss. Once mixed, toss in your salad dressing, too.
Step 4: Serve and Enjoy!
Voilà! You now have the perfect salad to snack on and enjoy with your friends and family! Just be sure they don't steal it all before you get a bite...
Stop and savor the taste of nature as fresh as it gets!
