Chicken and Rice with Greens

It’s time for an autumn harvest! At this point in the season, many of your greens will be ready to harvest. These include lettuces, kale, arugula, mustard, and spinach, as well as radishes. Let’s use some of these tasty greens in a warm and hearty autumn chicken and rice recipe!
This chicken and rice dish is fall-spiced and flavorful. The special trick to making this dish the ultimate comfort food is toasting the rice in spices before cooking it in broth. This gives the rice extra flavor and makes it almost like a risotto – perfect for chilly fall days!

INGREDIENTS
For this recipe, you will need the following:
- 1 tablespoon olive oil
- 2 chicken breasts (cubed)
- Garlic powder, onion powder, allspice, salt, and pepper (to taste)
- 2 cloves garlic (minced)
- 1/2 onion (diced)
- 2 cups uncooked rice
- 4 cups chicken broth
- 1 teaspoon allspice
- 1 teaspoon dried thyme
- 2 cups fresh spinach
- 1 cup mustard greens
- 1 cup kale
- 1 cup radishes (sliced thinly)
INSTRUCTIONS
Step 1: Cook the Chicken
In a large skillet or pot, heat the olive oil over medium heat. Add the chicken and season with garlic powder, onion powder, allspice, salt, and pepper to taste. Cook until golden brown and cooked through, about 5-7 minutes, stirring occasionally. Once cooked, set the chicken aside.
Step 2: Add the Garlic and Greens
Add the minced garlic and chopped onion to the same skillet and cook until fragrant (about 1-3 minutes).
Step 3: Add the Rice and Broth
Pour in the uncooked rice and toast briefly. Add the chicken broth and stir well to combine. Season with the allspice, thyme, salt, and pepper.
Step 4: Simmer
Bring the mixture to a gentle boil, then reduce the heat to low. Stir in the chopped spinach, mustard greens, and kale. Cover and let it simmer for about 18-20 minutes, until the rice is cooked and has absorbed the broth.
Step 5: Add Radishes
Once the rice is cooked, add the chicken back in and top with the sliced radishes to add a nice crunch.
