4 Fresh Garden Recipes for a Fun & Tasty Fourth of July

There’s nothing like a fresh garden harvest on a warm summer day – the sun-sweetened tomatoes, the crisp of the cucumbers, and the comforting scent of homegrown herbs. For many of us, summer brings fun memories of warmth, laughter, and good food! There’s also no better way to say “summer” than a Fourth of July picnic with homegrown fruits and veggies. To celebrate, we’ve compiled four classic and tasty garden harvest recipes to share with your loved ones this Fourth of July!

Fresh Summer Cucumber & Tomato Salad
Prep Time: 10 minutes
Servings: 4
INGREDIENTS
- 2 cups cherry tomatoes, halved
- 1 large cucumber, sliced
- 1 bell pepper, diced
- ¼ cup fresh basil, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice or red wine vinegar
- ½ teaspoon salt
- ¼ teaspoon black pepper

INSTRUCTIONS
Step 1: Prepare the Vegetables
Wash all of the vegetables thoroughly. Slice the cucumber, cut the tomatoes in half, dice the bell pepper, and chop the fresh basil.
Step 2: Combine the Ingredients
Add the sliced cucumber, tomatoes, bell pepper, and basil to a large mixing bowl.
Step 3: Add the Dressing
Drizzle the olive oil and lemon juice over the vegetables. Sprinkle with salt and pepper to taste.
Step 4: Toss the Salad
Gently toss everything together until the vegetables are evenly coated with the dressing.
Step 5: Chill and Serve
Place the salad in the refrigerator for 10–15 minutes before serving to let the flavors blend together.
Step 6: Enjoy!

Refrigerator Pickles
Prep Time: 15 minutes (+ 24 hours to chill)
Servings: 1 quart jar
INGREDIENTS
- 3–4 pickling cucumbers, sliced
- 1 cup white vinegar
- 1 cup water
- 1 tablespoon sugar
- 1 tablespoon salt
- 2 cloves garlic, smashed (optional)
- 2–3 sprigs fresh dill or thyme
- ½ teaspoon peppercorns (optional)

INSTRUCTIONS
Step 1: Prepare the Cucumbers
Wash the cucumbers thoroughly and slice them into even rounds.
Step 2: Fill the Jar
Place the sliced cucumbers and fresh herbs into a clean quart-sized jar.
Step 3: Make the Brine
In a bowl, stir together the vinegar, water, sugar, and salt until the sugar and salt are completely dissolved.
Step 4: Add the Brine
Pour the brine over the cucumbers until they are fully covered with the liquid.
Step 5: Refrigerate
Seal the jar with a lid and place it in the refrigerator.
Step 6: Wait and Enjoy!
Let the pickles chill for at least 24 hours before eating. For even more flavor, wait 2–3 days. Enjoy your crisp, homemade refrigerator pickles!
Garden Caprese Skewers
Prep Time: 10 minutes
Servings: 12 skewers
INGREDIENTS
- 24 cherry tomatoes
- 12 fresh mozzarella balls
- 24 basil leaves
- 2 tablespoons balsamic glaze
- 1 tablespoon olive oil
- Pinch of salt and pepper
- 12 small skewers or toothpicks

INSTRUCTIONS
Step 1: Assemble the Skewers
Thread one tomato, one basil leaf, one mozzarella ball, another basil leaf, and another tomato onto each skewer.
Step 2: Arrange the Skewers
Place the finished skewers on a serving plate or platter.
Step 3: Add the Toppings
Drizzle the skewers with olive oil and balsamic glaze. Sprinkle lightly with salt and pepper to taste.
Step 4: Serve and Enjoy!

Cucumber Mint Lemonade

INGREDIENTS
- 1 cucumber, peeled and chopped
- ½ cup fresh mint leaves
- 1 cup freshly squeezed lemon juice (about 4–6 lemons)
- ½ to ¾ cup sugar or honey
- 5 cups cold water
- Ice
- Lemon slices and mint sprigs for garnish (optional)

INSTRUCTIONS
Step 1: Blend the Cucumber
Add the cucumber and 1 cup of water to a blender. Blend until the mixture is smooth.
Step 2: Strain the Mixture
Pour the blended cucumber through a fine strainer into a pitcher. This step is optional but makes the lemonade extra smooth.
Step 3: Add the Remaining Ingredients
Stir in the lemon juice, sugar or honey, and the remaining water until everything is well combined.
Step 4: Add the Mint
Gently stir in the fresh mint leaves to add a cool, refreshing flavor.
Step 5: Chill the Lemonade
Place the pitcher in the refrigerator for at least 30 minutes to let the flavors blend together.
Step 6: Serve and Enjoy!
Pour the cucumber mint lemonade over ice and garnish with lemon slices and extra mint leaves, if desired. Enjoy this refreshing summer drink!
